Spice Almond Cookies

This recipe will enable you to make your " very own home made gingernuts cookies" If you want to jazz the cookie you can see I had add almonds, but you can try
1 cup glace ginger, preserved citrus peels or any combination of dried fruits & nuts. Chopped dried pears are delicious.
The lovely spicy tangy flavour will remain even with the addition of the other flavour.

2 cup self-raising flour
2 teaspoon ground ginger
1 teaspoon mixed spice
1/2 teaspoon nutmeg
2 tablespoon milk
1/2 cup sugar
125g margarine
1/2 cup golden syrup
1/2 teaspoon bicarbonate
150g sliver almonds
Method: makes about 25
  1. Preheat the oven & grease the baking tray.
  2. Combine the dry ingredients in a bowl.
  3. Melt the margarine, sugar,golden syrup & beat in the milk & bicarbonate.
    Mix into the dry ingredients.
  4. Roll into balls & flatten into the baking tray.
    Sprinkle with some almonds & raw sugar .
    Note: If you like really tangy ginger nut then add an extra 1 teaspoon of ground ginger
    Bake 150*C for 15 to 20 minutes

Scrumptious Cherries Ripe Cookies

Cherries & cranberries bust in your mouth then bit into the chocolate,taste delicious divine celebration of a good cookie experience.

250g Margarine
1 cup castor sugar
2 tblsp milk
4 drops red food colour
2 cup coconut
150g glace cherries
1oog dried cranberries
2 1/2 to 3 cup S/R flour
1pkt x 250g chocolate chip
Method :
  1. Preheat the oven at 120 *C & grease the baking tray.
  2. Cream the margarine & Sugar until white & sugar has dissolve.
    Add milk & red food colour, beat until combine.
  3. Add the flour & coconut, cranberries, cherries & candy canes( read note) & Chocolate chip , fold all ingredients until combine .
  4. Rolled into ball then flatten place onto the baking tray. Lastly you can add chopped candy canes onto the cookie or fold in the cookie mixture ? Up to you .
  5. Cook slowly to prevent browning. Cook for 25 mins
    Notes : If I'm give the cookies as a gift ,I sprinkle the candy canes on top of the biscuit & sprinkle some white cake sprinkles

Cranberries & Candy Christmas Cookies

This recipes Sweet Cranberries & Candy canes Christmas cookies are rolled in coconut ,make this sweet cook is delight to eat on this special time of Christmas .

250g cup margarine
1 cup caster sugar
2 1/2 cup self -raising flour
12 peppermint candy canes, chopped
150g cranberries ,chopped
3 tblsp MonaVie Juice
2 cup desiccated coconut
1 cup desiccated coconut rolled the biscuits mixture
Method : Makes 20 to 30
  1. Preheat the oven at 120 *C & grease the baking tray.
    Soak the Cranberries In the MonaVie juice.
  2. Cream the margarine & Sugar until white & sugar has dissolve.
    Add MonaVie juice from the Cranberries.
  3. Add the flour & coconut, cranberries & candy canes & fold to combine .
    Roll into balls & rolled into coconut.
  4. flatten place onto the baking tray. Lastly you can add chopped candy canes onto the cookie or fold in the cookie mixture ? Up to you .
  5. Cook slowly to prevent browning. Cook for 25 mins

Honey & Nut Cornflakes Biscuits

150g Margarine
2 teaspoon Vanilla essence
1/2 cup castor sugar
1 egg
1/2 cup chopped peanuts
1 1/2 cup self-raising flour
1 cup coconut
2 cup honey & nut Cornflakes
2 cups honey & nut Cornflakes,to roll the biscuits in
Method:
  • Cream margarine ,sugar ,vanilla essences & egg , until light in colour & fluffy.
  • Fold in flour,nuts,coconut & 2 cup cornflakes ,until well combine.
  • Rolled the cookie mixture into a small ball & rolled & press the crushed cornflakes in the cookie mixture.
  • Place on greased tray & cook on 180*C for 15mins or until light in colour
