1 cup glace ginger, preserved citrus peels or any combination of dried fruits & nuts. Chopped dried pears are delicious. The lovely spicy tangy flavour will remain even with the addition of the other flavour.

2 cup self-raising flour
2 teaspoon ground ginger
1 teaspoon mixed spice
1/2 teaspoon nutmeg
2 tablespoon milk
1/2 cup sugar
125g margarine
1/2 cup golden syrup
1/2 teaspoon bicarbonate
150g sliver almonds
Method: makes about 25
- Preheat the oven & grease the baking tray.
- Combine the dry ingredients in a bowl.
- Melt the margarine, sugar,golden syrup & beat in the milk & bicarbonate.
Mix into the dry ingredients. - Roll into balls & flatten into the baking tray.
Sprinkle with some almonds & raw sugar .
Note: If you like really tangy ginger nut then add an extra 1 teaspoon of ground ginger
Bake 150*C for 15 to 20 minutes
